Nico Merten (Founder)
Nico Merten is an experienced F&B professional with over 20 years in international hospitality, including 15 years in Thailand. His background covers 5-star luxury hotels, Michelin-recognized dining, large-scale banquets, and high-volume delivery and ghost-kitchen concepts.
He built his career with leading hotel groups, progressing through Sous Chef and Head Chef roles at Amari and Mövenpick, before advancing to Executive Sous Chef and Executive Chef positions at Anantara Siam and Anantara Riverside, overseeing multiple outlets, large banquet operations, and teams of over 120 staff.
After Anantara, Nico joined the opening team at Avani Hotels, supporting pre-opening setup and operational launch.
Beyond hotels, Nico introduced the first Berlin-style döner kebab to Thailand in 2019 with Berlin’s Döner Kebab, building a multi-outlet, multi-brand operation with a central kitchen before exit. Since then, he has helped develop more than 10 kebab shops across Thailand and has supported over 20 restaurant and food concept openings.
He is also the founder of Nico’s Grill & Craft House, later expanded into a cloud-kitchen operation with multiple virtual brands.
Chef Aris (R&D Chef /Manager)
With over 15 years of experience in luxury hotels such as Sheraton, Sofitel, and Avani across Thailand, Chef Aris specializes in operational setup and menu development. He brings hands-on expertise in both Thai and international cuisines, with a strong focus on consistency, cost control, and kitchen efficiency.
Aris has successfully supported pre-opening projects, team training, and the implementation of standardized processes that ensure high quality and smooth day-to-day operations across diverse hospitality environments. In addition, he works closely with owners and management teams to translate concepts into practical kitchen workflows, optimize supplier sourcing, and align menus with brand positioning, guest expectations, and profitability targets.
Chef Amir (Project Chef)
Amir has over 20 years of experience in professional kitchens, specializing in Italian and Mediterranean cuisine. He has worked across Austria, Switzerland, Germany, and Thailand, including roles with Avani Hotels, alpine hospitality concepts, and Michelin Guide listed restaurants in Germany. His international background gives him a strong understanding of different kitchen cultures, service standards, and guest expectations.
As a former Chef de Cuisine, he brings strong pre-opening expertise, with a proven track record in kitchen setup, menu development, team training, and establishing efficient, high-quality kitchen operations. He focuses on clear structures, cost awareness, and consistency, ensuring that teams are well-prepared and kitchens are ready to perform from day one.
K. Nisara (HR & Legal)
K. Nisara has over 10 years of professional experience and grew up and studied in the United States. She is fluent in both English and Thai, allowing her to communicate clearly with international teams, partners, and local stakeholders.
She is in charge of our HR department and legal matters, overseeing recruitment, contracts, payroll coordination, and employee relations. She ensures full compliance with all local laws, regulations, and requirements from relevant government authorities, while also supporting management with clear guidance on labor practices, documentation, and day-to-day HR operations.
Philipp (Marketing)
Philipp has more than 10 years of experience in online marketing and business development. He has worked across multiple industries, building and scaling brands through clear positioning, data-driven marketing strategies, and practical execution.
He is responsible for marketing strategy and growth, covering digital channels, performance marketing, partnerships, and customer acquisition. With a strong business development focus, he connects marketing activities with commercial goals, identifying new opportunities, building strategic collaborations, and driving sustainable growth.
